Braised Cabbage Steaks with White Beans, Garlic & Herbs

Ingredients
1 large green or Savoy cabbage
3 tbsp olive oil
1 onion, sliced
4 cloves garlic, sliced
1 tsp smoked paprika
½ tsp red pepper flakes (optional)
1 cup vegetable or chicken stock
1 can (15 oz) white beans, drained and rinsed
1 tbsp apple cider vinegar or lemon juice
Salt & black pepper, to taste
Fresh thyme or parsley for finishing
Optional upgrades:
Parmesan or pecorino
Crusty bread
Poached or fried eggs
Crispy bacon or pancetta
Instructions
Slice the cabbage into “steaks” - Cut cabbage into thick slabs, about 1 to 1½ inches thick. Keep the core intact so they don’t fall apart.
Sear for color - Heat 2 tbsp olive oil in a wide skillet or Dutch oven over medium heat. Sear cabbage steaks over medium-high heat until deeply golden on both sides. Remove and set aside.
Build the flavor floor - Add remaining olive oil. Sauté onion until soft and sweet. Add garlic, smoked paprika, and red pepper flakes. Stir for 30 seconds.
Braise - Nestle cabbage steaks back into the pan. Pour in stock.
Cover and simmer gently for 20–25 minutes, until cabbage is tender and silky.Add the beans - Spoon beans around the cabbage and simmer uncovered 5 more minutes.
Finish bright - Splash with vinegar or lemon. Season generously with salt and pepper.
Serve like an entree - Top with herbs, cheese, or egg. Mop with bread.
